I just shipped off a Forest Faerie Coat this morning, to the Netherlands.  :)  I love international sales.  It makes me so happy to imagine people all over the world wearing my creations.. I've sold in Australia, Canada, the UK and now the Netherlands (and the US of course) and I feel so global!  The internet rules.

Relisted the coat on Etsy and today two different people found it and liked it enough to feature it in their treasuries.  (Treasuries on Etsy are a group of items that someone collects and features together - it's a really fun way to browse Etsy.)

Today my coat was featured in Beautiful Greens for Nature Lovers and in Lettuce Wraps, both really fun collections and both so different!

Also, today I started on a new hoodie design with a spiral hood.  It is driving me bonkers.  I think if I can get this crazy idea to work it will look amazing.  Hopefully I will figure it out before I waste all my fleece on screw-ups.  :)  Oh well.  Screw-ups are fun too.. mistakes often get transformed into better ideas than I had in the first place, so.. who knows what will come of this?

Son is feeding himself (he's 15 and a keen cook, and basically has the choice of anything in the fridge, freezer or cupboard that has not been allocated to another meal.
Hubby and I have date night at home - we are working through a few months of themed date nights, with a different nation each week.  This week is St Davids Day so we are going with a Welsh theme.

THURSDAY
Chicken Breasts baked in a jar of Cooking Sauce (flavour will get chose according to my mood on the day, we have a few different ones).

Here is my entry for this week's Thankfulness journey, in no particular order . . . .

293. "no rules! reading is what is important not whether you are caught up, no guilt, JUST READ THE WORD!"

294.  All the help hubby gave me clearing out eldest's room so we could redecorate.

295.  Good deal on paint for the room.

296.  Hubby did all the painting, including the ceiling.

297.  New furniture for that room ordered.

298.  Finances are in an OKish position and so we are able to buy a new car to replace the one that is making AWFUL noises.  With the mileage hubby covers to and from work each day we need something reliable.

299.  Menu planning skills - in order to afford the new car one of the things we need to do is bring down our grocery spending, menu planning will allow me to do that.

300.  Pain killers work, even on caffeine withdrawal headaches.

301.  New passport arrived and we are now discussing dates for a trip to Romania.  ooh heck!

302.  Youngest had good time on the last of his youth leadership weekends.

303.  And we had a good time in Reading while he was there.

304.  Eldest seems to be doing OK on his internship and applications for next year are moving forward.

305.  Washing machine!

306.  Central Heating and hot water.

307.  Vacuum cleaner.

I have this recipe listed on Recipe Zaar, and you can get an easily printed version there. I shall be going really really basic with these instructions, please don't be offended, the idea is that my eldest son, will be able to follow them without phoning home to ask "what do I do next?" when he starts cooking for himself.


This recipe is on a sheet cut out from a magazine years ago. I think it's probably family circle, but not certain. Made it quite a lot for a while, but then stopped.

time to make 1 hour
10 min prep
4 tablespoons oil (I use the cheap olive oil but whatever you have on hand will do) (I don't measure it just put in a decent size glug, you can add more later if you need to )Actually, these days I don't use copious amounts of oil and just use spray oil instead.  You can either buy the spray oil in the supermarket OR buy a refillable bottle.
1 large onion, sliced
3 cloves garlic, crushed (I use the lazy garlic in a jar, 3 tsp)
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 1/4 teaspoons ground coriander
1 1/4 teaspoons garam masala
800g pack minced (ground) beef (You can buy the cheap stuff and treat as shown in the instructions below, which makes it almost as lean as the most expensive mince at much lower price) Or buy the extra lean when it is on offer.
19 fluid ounces beef stock
12 ounces basmati rice
6 ounces spinach, roughly shredded
4 ounces sultanas (I leave these out by preference, yucky horrible shrivelled things)
2 ounces whole almonds (I can't remember the last time I put these in, only use them if you are really trying to impress)


1. Fry the beef mince in a non stick pan.

2. Fry until the mince is all browned.

3. Put a sieve over a glass bowl or the sink and carefully spoon the mince into your sieve.

4. Leave as much of the fat in your pan as you can, you do not want to block the drains if you are doing this over the sink. You can either pour the fat left in the pan into a jar for disposal, or leave to cool, where it will set and you can scoop it out into the bin. Here you can see just how much fat was left from 800g of mince, but when you add the next step it becomes some of the leanest mince you can use.

5. Take a kettle full of boiling water and pour over the mince in the sieve. This will rinse off all remaining fat and ensure it gets far enough down the drains that it doesn't block up. If you are concerned about the fat and the drains, spooning into the sieve over a bowl is better, but you will still need to pour the boiling water over the mince in the sieve, and this should be OK over the sink.

By frying, draining and rinsing in this way you get a really low fat meat, for such a low price. I can buy a big pack of the cheap mince for less than half what I buy a normal pack of the leanest mince. So, even if I end up with the same weight of meat as the lean pack after I've drained it, I still have paid only half the price.

6. Meanwhile slice the onion and prepare the other ingredients.



7. Heat the oil in a large saucepan (you need a big pan because of the spinach later)

add the onion and fry for 3- 4 minutes until softened.

8. Add the garlic and spices

and fry for another 3 minutes. If any of this starts to burn and stick, add a little more oil.

9. Add the minced beef back into the pan

and thoroughly stir to coat.

10. Add the beef stock and bring to the boil.

11. Cover and simmer for 40 minutes until all the meat is tender.


12. MEANWHILE if you are using ordinary rice, cook the rice until tender. If you are cheating and using microwave in the bag rice, get it out of the cupboard, nothing worse than finding out in half an hours time that you haven't got a packet left and could have cooked some proper rice in the meantime. Microwave in the bag rice might not seem economical for a student, and I agree, that at supermarket prices it is not, with most supermarkets ranging from £1.25 to £1.50 or more for enough for 2 people. We don't buy ours at the main supermarket, we buy it in a discount store and pay just £0.49 per bag. Using 2 bags for this recipe, which serves 4.

13. While the meat mixture is simmering away you will need to trim your spinach leaves. This is usually done in front of the tv, although make sure you have set a timer so you don't let your pan burn dry.

Take each leaf and simply pull away the stalk as far as you can, toss that aside and keep the main part of the leaf. This can be avoided by buying baby leaf spinach although this is more expensive.
You could also use either tinned or frozen spinach, rinsing or defrosting before use. The meal won't look quite as nice but I think it tastes even better.

14. Roughly shred the spinach. I have found the best way to do this is to take the bowl you put the leaves into as you trimmed them and take a pair of scissors to the bowl, just cutting through the leaves as many times as you need to.

15. If using microwave rice, don't even bother to microwave, simply empty into the pan about 5 minutes before you expect to serve, stir in and leave to heat through.

If using cooked rice, you can leave this until right at the end.

16. Tip the bowl of spinach into the pan.

It will FILL the pan.

Don't panic, it wilts down very quickly.

17. Keep the heat under the pan and gently stir in the spinach until it is done to the consistency you prefer, you can keep the leaves looking quite fresh or wilt them down completely.

18. DONE

19. Serve with naan breads, or as shown here, pitta breads, cheaper and not so filling, leaves more room for the lovely mixture.

From a few years ago when hubby and I renewed our vows.


Andrew, I love you. I love you for what you are, but I love you yet more for what you are going to be. I love you not so much for your realities as for your ideals and your dreams. I pray that you dream big dreams and I promise to be here by your side, to see them come true.

I want you, Andrew, as my life’s mate. The love you have given me has reached into my heart and taken my soul captive. I have known no other love like yours outside of God and I joyously recommit myself to you, as I did 11 years ago.

I will share with you all the good and all the bad of life, all the laughter and the tears. I will rejoice in your strengths and help you develop them and I will encourage you and love you in spite of any weaknesses you may have. Not always shall you be what you are now. You are going forward toward something great. I am on the way with you and I love you. I will love you the rest of my life, because it is my choice to do so. This is the covenant I make with you."
First posted this some years ago when I was struggling wtih getting back into journaling.  I think I am there again.  Thankfully my tail bone isn't an issue anymore, although I now have new health issues that can be uncomfortable in other ways.  All the emotional stuff still applies, I think.


I have been journaling on and off for quite a few years now.  It helps me sort out my thoughts, hear what I am really feeling and even hear God's response.  When I read the chapter about journal writing in "Fresh Brewed Life", I just sat there saying "YES!", "YES!", "YES!"

Lately, however, for a good number of months, I have not been journaling.  Why?  It's not that I don't have time because I do, I sit here at the computer desk for hours a day, a lot of it doing nothing much of anything, and I could use that time or journaling.  There is time.  Part of it has been space and place.  I used to journal curled up in the corner of the sofa, but since I fell and broke my tail bone last March, that just hasn't been possible.  I have tried, but I can only get comfortable for about 15 minutes or so and then I have to shift position, and then again and then . . . .  well, you get the picture.  But again that is only part of it.

So what is stopping me journaling, what is stopping me writing down my thoughts and feelings, what is stopping me seeking God's response on those things, as I write?  You know, over the last couple of days I think I have come up with an answer.

I'm scared!
Scared of what I might find out about myself.  Scared of what I might find out about other people.  Journaling changes things, journaling changes me, changes how I see me, changes how I see others, and therefore changes how I see them.  So am I scared to let go off some stuff that I hold close to my heart, scared to believe that "those people" are really not whatever label I have put upon them?  Am I just scared that I will have to admit to myself that I'm not all I pretend to be? I think I'm also scared that once I open this up, I won't be able to stop, that I'll be taking the lid off stuff and that I won't be able to get the lid back on it again.  There is also the possibility that i will discover that people are negative towards me, rather than at the moment me convincing myself "well, I know I think it's that way but it's me being hormonal, it can't really be like that, can it"  Do you understand what I mean?  Can I risk that?  But what about the possibility that I discover that I am actually MORE than I pretend to be, what about the possibility that I discover that there are things I can easily do to change the way I feel and think for the better?

Lorica
The early Celtic church had many 'breastplate prayers', or 'lorica', which declared the surrounding and encompassing of God. Such prayers were not to make God come - He is already there - but to open our eyes to the reality. In breastplate prayers, the person who prays seeks to become aware of what is already a reality.
The following prayer is from the 4th century and is attributed to St. Patrick.

I've long been an admirer of the versatile blonde bob hairstyle of Countdown brainbox Rachel Riley. She seems to have a different variation on her blonde bob every day. Here are some of the highlights including the bob from behind!





This morning I was reading my bible and I came across something.  I'm doing a Bible in a Year read through with a whole bunch of women on facebook.  There's over 100 of us now, all reading whatever bible version we choose, all using different reading plans, but all planning on reading through our bibles in a year.  For some it is the first time, for others it is something they have done before, but ALL TOGETHER, doing this.  It's incredible!

I'm doing this read through in The Message and this morning was reading in Numbers and read the Aaronic blessing.  I am sure I have read the Aaronic blessing in the Message before, but this morning the particular wording that the Message has struck me.

24 God bless you and keep you,25 God smile on you and gift you,
26 God look you full in the face and make you prosper.
God smile on you and GIFT YOU! God LOOK YOU FULL IN THE FACE!

WOW, isn't that powerful!  Something about looking you full in the face that speaks to me far more than "turn his face towards you."  So, I did what we do on that facebook group and shared that this had jumped out at me.  Someone else commented that that reminded them of a traditional Irish blessing and so HERE WE ARE.

Over the years I have pulled together a small file on my computer of various biblical and traditional blessings.  Many of them Celtic, but also from other traditions too.
I am going to share them here on my facebook, a few a day for the next few days.  I don't know how long it will take, but here goes:


May the road rise up to meet you.
May the wind be always at your back.
May the sun shine warm upon your face;
the rains fall soft upon your fields and until we meet again, may God hold you in the palm of His hand.
